But partway through the maturation it loses its veil of flor and begins oxidative ageing as an oloroso sherry would. This combined maturation results in a wine with some of the richness of oloroso and some of the crispness of amontillado. As we mentioned, it is rare stuff; just 1 to 2% of the grapes pressed for sherry naturally develop into palo cortado. Other Dessert |
